Smokey stone fruit and apple aromas with a light and grippy palate.
A plethora of different grapes, with even more variety in terms of how they're processed. Müller Thurgau grapes are part whole bunch pressed into stainless steel, part crushed and destemmed, with 24–48 hours skin contact; Ortega grapes crushed and destemmed, foot treading twice a day for 5–7 days before pressing in small basket press and fermenting in stainless steel, some fermented and agedin oak barrel. Bacchus grapes whole bunch pressed and fermented in stainless steel, aged in oak fuder; Chardonnay grapes whole bunch pressed and fermented in stainless steel; Schönburger grapes hand selected on sorting table, whole bunches foot trodden and left on skins for 24 hours before pressing in basket press and fermenting in stainless steel. This is a truly punchy and complex white! Tillingham is the brainchild of Ben Walgate, who has quickly become a winemaker to keep your eye on. The primary focus of the label is ecological biodiversity, which has led to the production of distinct, exciting wines. Using natural methods, they combine ancient traditional farming techniques and contemporary best practice to create a range of low intervention wines that allow the grapes to really shine.
