Ube is a delicious, easy to drink and direct white wine. White fruit on the nose, more intense, concentrated roast pineapple on the way in and just a hint of grapefruit on the finish. In the mouth it is clean and balanced, light and crispy, with the typical salinity of the area. Fermented and aged for 8 months in old sherry casks with the later 2 months under veil flower.
Bodegas Cota 45 is located in an old boat workshop in Bajo de Guía, a magical beach of Sanlúcar de Barrameda. Here, Ramario Ibanez makes his wines, younger ones, with shorter ageing, from recovered native grape varieties, experimenting with the albariza soil that is known for its water retention. Ramiro seeks to make manzanilla as they did in the olden days, without fortification and with shorter ageing, bringing all the focus on the terroir and the personality of each farm. With all the expression of the grapes marked by the soils, the climate and the vintage, and with the ageing only present to the necessary extent, to complement and boost the character of the terroir.
