Rubies in the Rubble is a sustainable food company that makes delicious relishes and ketchups with fresh fruit and veg that would otherwise be discarded, aiming to provide a practical solution to food waste. The pink onion and chilli relish is made from a special variety of Rosanna pink onions for which there are particularly high levels of wastage for the oversized and blemished ones. Rubies in the Rubble rescue the rejects and slowly caramelise them for a deliciously sticky and sweet relish.
