Some nutty, red fruit aromas, alongside a biscuity character. Persistent but gentle bubbles support a medium palate with a smidgen of elusive oak.
Manually harvested in 15 kg baskets, whole bunch pressed and de-stemmed crushed grapes which were macerated, 100% fermented in stainless steel with indigenous yeasts. 60% transferred to foudre for 4 months. Second fermentation in bottle – ancestral method. No filtration nor fining.
