Filling the glass with dusty pink foamy “mousse”, this wine will make you feel like you’re relaxing on a dreamyyyy cotton-candy cloud with aromas of raspberry and strawberry, flavours of fresh wild herbs and a long creamy finish.
The grapes are direct-pressed, cold-fermented, then bottled with 15 g/L of sugar for a second fermentation “sûr point” (upside down on its crown cap) to give it that glorious sparkle we crave. The wine was disgorged after five months in bottle and was released un-sulfured.
Raphael Saint Cyr is the fourth generation Vigneron at the newly named Domaine Saint Cyr. Formerly Domaine de Bellevue, started by Raphael’s great-grandfather, they are based in Anse in the southern edge of Beaujolais. In 2008, Raphael took over vines in the Northern Crus ofMorgon, Regnié, Chénas, and Moulin-à-Vent. The entire 23 hectare Domaine is certified organic.Each cuvée is split into single vineyard parcels and all are fermented in concrete tanks and then aged in old barrels for 12-18 months.
