The grapes take 6 hours of maceration, hence its pale golden colour and then the wine is bottled using the ancestral method giving it that exhilarating bubble. Alessandro Della of Ombretto Agricola planted one and a half hectares of Pinot noir on his family’s farm in Belluno right at the foot of the Dolomites. This dramatic vineyard surrounded by mountains is planted over alluvial marl six hundred metres above sea level. Alex farms four hectares of Verduzzo Trevigiano, Merlot and Cabernet Sauvignon among thirty year old vines just two hundred metres above and twenty kilometres from the Adriatic. The wines from this site are named Pedecastello, after the road that runs along the mountains.
