A bouquet of floral flavours complimented by a combination of ripe apricot and sage. This frizzante is fermented on skins and then re-fermented in the bottle without disgorgement painting it that hazy orange colour.
Camillo Donati is a family company whose origins date back to 1930. The grandfather of Camillo planted a small vineyard for family consumption in a place called Groppone. Now it cultivates 10 hectares of vineyards, according to organic and biodynamic methods. The wines are born in a natural way: no fermentation control, no thermal forcing, no aid of chemistry, no fining, no acidification. The effervescing is done with natural fermentation in the bottle, a method that does not require any chemical preservatives, and the resulting wine improves with age. The cultivated vines are mostly Aromatic Malvasia di Candia, Sauvignon, Yellow Muscat, Barbera, Lambrusco Maestri, Trebbiano and Malvasia Rosa.
