When you dream of fizzy, thirst-quenching red, Camillo Donati's Lambrusco is the muse. Doing everything a wine like this should, it brings all the red fruits with it - cherry, raspberry, plum-y goodness; in a bottle.
In order to produce this bottle of sparkling superwine, the Lambrusco grapes are grown in Barbiano, Parma, at around 300 meters above sea level. All farming is organic and biodynamic (shout out the moon) and all processes are done by hand. The wine is bottled unfined and unfilitered, giving it a noticeable inky cloudiness.
Camillo Donati is a family company whose origins date back to 1930. The grandfather of Camillo planted a small vineyard for family consumption in a place called Groppone. Now it cultivates 10 hectares of vineyards, according to organic and biodynamic methods. The wines are born in a natural way: no fermentation control, no thermal forcing, no aid of chemistry, no fining, no acidification. The effervescing is done with natural fermentation in the bottle, a method that does not require any chemical preservatives, and the resulting wine improves with age. The cultivated vines are mostly Aromatic Malvasia di Candia, Sauvignon, Yellow Muscat, Barbera, Lambrusco Maestri, Trebbiano and Malvasia Rosa.
