This wine embodies a mouthful of savoury, salty and herbaceous flavours that are enhanced by fruity notes of orange blossom and a high acidic finish.
An experimental look at longer maceration following a generous harvest. Half the grapes are destemmed and see a week long maceration, vinified and aged seperately, before being blended back together before bottling.
Cedric Garreau makes tiny amounts, roughly 1000 bottles a year, of exceptional Loire Valley natural wine in a renovated stone building across from his home at the edge of the vineyards. All of his vineyards are certified organic, and winemaking is precise, but with a laissez-faire attitude. Garreau uses a 50/50 mix of vines planted in 1982, and 2012. With old fashioned equipment, and a traditional approach, Cedric is making some of the best wines in the Loire Valley.
