A wonderfully fresh, cloudy sparkling wine made with the pretty, perfumed local variety, Malvasia di Candia. The gentle bubbles carry pure, vibrant flavours of refreshing white grapefruit; with a clean, salty finish. The zesty lime cordial and rose blossom aromas that you'd expect from the grape are present on the nose. The perfect wine for celebrating the arrival of La Primavera!
Roberto makes all of his sparkling wine in the traditional method, meaning that, following its initial fermentation in the vat, the wine is re-fermented in the bottle under closure to trap the bubbles. No sugars or selected yeasts are added to achieve this; in a walk-in fridge in the cellar Roberto keeps a supply of grape must - basically raw grape juice kept at this low temperature to stop it from fermenting. Once in the bottle it gets to work! Another of Roberto's little touches is to disgorge the bottles to order, meaning the later in the season the wine is shipped the longer it sits on the lees, resulting in subtle additional depth as the wine develops over the year.
From his family’s vineyards in Montecchio Emilia, Roberto Maestri makes a handful of sparkling wines that equal the best in the region. Roberto works organically on five hectares of vines sat on clay-gravel soils. He only uses wild yeasts and his bubbles are made the traditional way. The resulting wines are deceptively simple, but always delicious, made with eating well and good times in mind.
