Delicately light fizz, dry and peachy. Fermented in bottle with wild yeast, which characterises the palate. Shake before drinking to distribute the lees!
The 330slm refers to the meters above sea level of the particular vines that Costadila has used. With the "330" most of the grapes are pressed and turned to a still dry wine while a second portion is left out to dry and shrivel achieving dessert wine sweetness. Juice from the sweet batch is then added to the dry wine. The bottle is then capped and left to re-ferment. The entire process takes place without the addition of commercial yeasts, sugar or enzymes.
Costadila is a small, traditional, organic, “closed-loop” farm in the hills north of Venice. In accordance with the local tradition, their wines are only fermented in bottle, using wild-yeasts and never adding sulphites as they aim to produce honest, easy-drinking sparkling wines.
